Sourdough Starter
Back in the old mining days a good starter was a prized possession. Today we use a commercial yeast in the starter
with excellent results. Here is what it takes:
1 pkg active dry yeast
1-1/2 cups flour
1 tbl spoon of sugar
1/4 cup of lukewarm water
2 cups warm water
Using a quart jar, dissolve the yeast in a 1/4 cup of warm water. Allow to stand 4 or 5 minutes then stir in the
rest of the water, sugar and flour. Cover with a cloth and leave overnight at room temperature. Stir if mixture
rises to the top. Next morning replace jar lid and put in refrigerator. It's now ready for use.

Sourdough Pancakes
These pancakes take a bit more work then ordinary ones but it is worth it in the morning.
Mix together the night before:
2 cups flour
2 cups milk
1 cup starter mix
Let mixture stand overnight at room temperature, then next morning when your ready to bake, add:
2 eggs beaten
1 tsp baking soda
1 tsp salt
Stir batter until mixed well. Pour onto griddle as needed. Makes about 16 pancakes.

Gold Strike Breakfast
This breakfast will keep 6 people going strong all morning.
2 lbs country sausage
12 eggs beaten
4 potatoes, peeled & diced
1/4 cup milk
Brown sausage in large skillet. Remove sausage and heat drippings over medium high heat. Add
the potatoes and fry while stirring for about 10 minutes. Arrange the potatoes into a layer
on the pan bottom, then add the sausage on top. In a separate bowl, add milk to eggs and
beat thoroughy. Now pour egg mixture over sausage evenly. cover and cook over medium heat
until eggs are set. Takes about 30 minutes. Serves 6 to 8 miners.
